Our Story:

After a long career as a cancer biologist, Tom discovered a new passion in the craft of naturally leavened bread. What began as a hobby grew into a calling, leading him to the French Pastry School in Chicago in 2016 to study L’Art de la Boulangerie.

Tom first shared his breads at farmers markets in Newton and Needham, where loyal customers and weekly sellouts showed there was room to grow. He and his wife, Sarah, eventually moved to Cape Cod, and on July 2, 2024, opened Liberty Artisanal Breads in West Chatham—a community-focused bakery serving naturally leavened breads and breakfast pastries year-round.

Today, Tom, Sarah, and their family live full-time in North Chatham, where they enjoy the quiet beauty of Cape Cod, beach walks with their dogs, and movies at the Chatham Orpheum Theatre.
