Why are open these days and not 7 days a week?

We close on Mondays to give our team, including family members, a well-deserved day of rest. Mondays are also dedicated to essential maintenance of our valuable baking equipment, ordering fresh ingredients for the upcoming week, and handling administrative tasks. On Tuesdays and Wednesdays, our baking team focuses on crucial prep and production, ensuring that we have a wide selection of fresh baked goods for the four days we’re open.

Baking exceptional breads and pastries requires time and attention to detail. We take this seriously to deliver the best-tasting products. Everything we bake is made to sell the same day, so you can always count on freshness. Our sourdough breads, for instance, undergo over 30 hours of slow fermentation before being baked in our Italian deck oven, resulting in a richer flavor, longer shelf life, and improved digestibility.

Our bread menu varies each of the four days we’re open, intentionally offering our customers more variety while maintaining consistency from week to week until the season changes. You can check the day’s menu on our website or sign up for our email list to receive it in advance.
